Bison Taco Salad

Ingredients:

• 1 c. sour cream
• 1 T. canned jalapeno peppers, chopped
• 3 T. chili sauce
• 1 tsp. onion, finely grated

Salad

• 1 lb. ground Bison, browned
• 1 lg. avocado, peeled and sliced
• 1/2 c. onion, chopped
• 3 tomatoes, quartered
• 1 (15-oz.) can red kidney beans, drained
• 1/2 c. pitted ripe olives, sliced
• 1 pkg. 1 1/4 ounces taco seasoning mix
• 2 c. taco flavored tortilla chips, slightly
• 1 c. water broken
• 2 qts. Romaine lettuce or salad greens
• 1 1/2 c. Cheddar cheese, shredded, chilled and torn

Preparation:

Dressing: Combine ingredients; cover and chill to blend flavors.

Salad:  Brown Bison with onion. Drain. Add kidney beans, taco seasoning mix and water. Cover and simmer 10 minutes. Drain. Assemble salad: toss meat mixture with lettuce, avocado, tomatoes, olives, tortilla chips, cheese and chilled dressing. Serves 6.
